Check out this great energy packed salad for after your workouts
- 1 cup lettuce
- ⅓ cup spinach
- ⅓ cup slices cucumber, chopped
- ⅓ medium whole (2-3/5" dia) tomatoes
- ⅓ oz bean sprouts, canned
- ⅓ cup carrot, shredded
- 6 whole mushroom
- ⅓ fruit, without skin and seed avocado
- 1 tbsp sunflower seeds
- 1 tbsp olive oil
- 2 tsp lemon juice
- 1 to taste thyme
- In a medium-sized salad bowl, combine lettuce, spinach, cucumber, tomato, sprouts, carrots, mushrooms, avocado, and sunflower seeds.
- In a screw-top jar, mix olive oil with lemon juice and herbs. Shake vigorously, and pour over salad.
