Ingredients

  • 1 cup lettuce
  • ⅓ cup spinach
  • ⅓ cup slices cucumber, chopped
  • ⅓ medium whole (2-3/5" dia) tomatoes
  • ⅓ oz bean sprouts, canned
  • ⅓ cup carrot, shredded
  • 6 whole mushroom
  • ⅓ fruit, without skin and seed avocado
  • 1 tbsp sunflower seeds
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • 1 to taste thyme

  1. In a medium-sized salad bowl, combine lettuce, spinach, cucumber, tomato, sprouts, carrots, mushrooms, avocado, and sunflower seeds.
  2. In a screw-top jar, mix olive oil with lemon juice and herbs. Shake vigorously, and pour over salad.
