Store-bought brownies might not fit your macros, but that doesn't mean the squares of gooey, chocolaty goodness have to be taken off the table completely. Try these zucchini and sweet-potato brownies instead!

- 2 whole sweet potato
- ½ cup quinoa flour
- 1 whole zucchini, sliced
- ½ cup cocoa powder, unsweetened
- 1½ tsp baking powder
- 2 egg
- 3 egg whites
- ⅓ cup honey

- Preheat oven to 415 F.
- Bake potatoes for approximately one hour, or until they're soft. Allow to cool to room temperature.
- Preheat oven to 350 F.
- Mash sweet potatoes into a large mixing bowl. Add all remaining ingredients and mix thoroughly.
- Evenly divide batter into a muffin pan. Bake for 30 minutes, or until a toothpick inserted into brownies comes out clean.
