Brown rice is a healthier carb source than its bleached cousin, but it can get very boring, very fast. With this coconut rice recipe, you'll start looking forward to this wholesome grain once again.

Ingredients

  • 1½ cup brown rice
  • 2 cup light coconut milk
  • 2 cup water
  • ½ tsp salt
  • 3 tbsp dried unsweetened coconut flakes
  • ¼ cup cashews, crushed

  1. In a large pot, combine the rice, coconut milk, water, salt, and 2 tablespoons of coconut flakes.
  2. Bring to a boil, then turn down to low, cover, and let simmer for about an hour or until liquid has been is absorbed.
  3. Once the rice is finished, fluff it with a fork, then stir in the cashews and the remaining coconut flakes. Serve immediately.
