Brown rice is a healthier carb source than its bleached cousin, but it can get very boring, very fast. With this coconut rice recipe, you'll start looking forward to this wholesome grain once again.
- 1½ cup brown rice
- 2 cup light coconut milk
- 2 cup water
- ½ tsp salt
- 3 tbsp dried unsweetened coconut flakes
- ¼ cup cashews, crushed
- In a large pot, combine the rice, coconut milk, water, salt, and 2 tablespoons of coconut flakes.
- Bring to a boil, then turn down to low, cover, and let simmer for about an hour or until liquid has been is absorbed.
- Once the rice is finished, fluff it with a fork, then stir in the cashews and the remaining coconut flakes. Serve immediately.
