Pancake Ingredients

  • ¼ tsp baking soda
  • 2 egg whites
  • 1 scoop(s) vanilla whey protein powder
  • ¼ tsp cinnamon
  • ¼ tsp cocoa powder, unsweetened
  • 1 tbsp natural peanut butter
  • 1 tbsp sugar-free maple syrup
  • 1 tbsp nonfat plain Greek yogurt
  • ⅓ cup raw oats
  • 1 bar quest Bar, chocolate peanut butter

Peanut Butter Protein Icing Ingredients

  • 1 scoop(s) vanilla whey protein powder
  • 1 tbsp nonfat plain Greek yogurt
  • water
  • 2 tbsp powdered peanut butter

  1. Combine all ingredients except the Quest bar in a blender, and blend until smooth.
  2. Dice up the Quest bar into chunks the size of chocolate chips. To make cutting easier, store the Quest bar in the fridge ahead of time for at least one hour.
  3. Heat a skillet on the stove over medium heat, then coat it with cooking spray.
  4. Spoon the batter onto the skillet to form 3- to 4-inch pancakes. Add a few Quest bar chunks to each pancake.
  5. Cook until lightly browned on one side, flip, and repeat.
  6. Plate the pancakes, and top them with peanut butter protein icing or your favorite topping.
  7. Peanut butter protein icing directions: Add the whey, Greek yogurt, and PB2 to a bowl and stir until fully combined. Add water very slowly until you've reached your desired consistency. Drizzle the icing over your delicious protein packed pancakes, or just eat it with a spoon!
