Today's recipe is Turkey Meatloaf Muffins.
Jamie Eason's Turkey Meatloaf Muffins

- 2 lbs ground turkey (or chicken)
- 3 egg whites
- 1 cup quick cooking oats
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- 2 tsp dry yellow mustard
- 2 tsp black pepper
- 2 tsp chipotle pepper spice
- 1 tsp salt
- 2 tbsp garlic powder (2 cloves minced)
- 1 small onion (finely chopped)
- 2 celery stalks (finely chopped)
- Preheat oven to 375 degrees.
- Spray muffin pan with canola or olive oil.
- Mix all your ingredients together in one large bowl.
- Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball.
- Bake for 40 minutes.

I am confused. WHy is the calorie count so low? When I put all of the ingredients into the recipe calculator on SparkPeople it says that the calorie count is 273 cals. The turkey alone is over 100 calories per serving. Please explain this...
Are you choosing chicken or turkey breast?
If not, ground turkey and chicken can be high in cals and fat, because they include skin and other parts
most likley because you didnt divide the recipe into separate portions
The calories mainly come from the turkey, egg whites and oats. There's not much to them. Mine comes out to 243cal. There is 3.12g fat, 14.12 carbs, and 39.6 pro. 28.08 56.48 158.4= 242. 96.

I couldn t find celery stalks at this time of the yer here in Croatia so I used 200g of pumpkins instead and it turned out just fine :)
Hey all! I wanted to add in that I made the turkey meatloaf muffins into "Tofurky Meatless Muffins" and they were supper-yummy! Only thing you swap out is the turkey and tofu. Get some tofu that's medium firmness and unflavored (the ingredients will flavor the tofu well) so that you can mix it together. It should be about the same consistency as the raw turkey meat is when mixing it. Don't worry! The egg whites will cause it to stick together nicely and back well! You may just have to cook it a tad longer than the actual turkey muffins (I like them a little browner than what some may). Enjoy!!!

Thanks for the meatless option. I'm not a vegan
(still have fish and eggs, pescitarian) but I do eat like one more often than not. Since I don't eat chicken, or turkey this is a great alternative and will add some variety. I will be trying it soon.
