Jamie Eason's Turkey Meatloaf Muffins

Ingredients
Directions
  1. Preheat oven to 375 degrees.
  2. Spray muffin pan with canola or olive oil.
  3. Mix all your ingredients together in one large bowl.
  4. Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetball.
  5. Bake for 40 minutes.

Makes 12 muffins.

Today, I made them for the first time, they're delicious! Some of the ingredients are not available in Holland, like the chipotle peper spice. But I used other spices instead ;)

Hi
Unfortunately ground turkey or chicken are not available in Portugal.
If i swich it to ground beed does it changes much the nutricion facts?

I made these this morning. I didn't have any thyme or chipotle pepper spice so left those out and added a dash each of red pepper flakes and hot sauce. They were delicious, even my 14 month old loved them!

So I have started using two muffin pans for this recipe. They are just too big and cause spillage into the oven. So this recipe yields 24 muffins for me, not 12.

i want to make these but i'm confused. the nutrition facts in the article are different from the ones on the printable PDF, so which one is it? they both say serving size is 2 muffins.

yes they are delicious! id recommend adding some more spices to it because it can be a little bland. I used bell peppers instead of celery though, i think they taste better with the peppers. also, if you dont have quick cooking oats old fashioned are just fine, the only difference is the texture of it

Made these a couple a weeks ago. They are good but play with more spices because they are slightly bland. I combined a steak seasoning spice which helped but thats salt. But thumbs up for a really healthy snack in the middle of the day. Thanks allot!

Just had these for the 1st time today and love them. Although they are drier than regular meatloaf, I actually prefer these. Easy to make.

Yum. These are awesome. Just made a batch and used cooked quinoa instead of oats for a little more protein. Also added 1/4 cup red pepper, 1/4 cup cilantro and a finely chopped Jalapeno. Was a little watery, so make sure to indent the top and don't overfill the tin. Might try with uncooked quinoa next time to see if it soaks up the juice!
