- 4 cup kale, diced
- 2 tbsp almonds, slivered
- 1 can mandarin oranges, drained
- 2 tbsp dried cranberries
- 2 tbsp olive oil
- 1 tbsp vinegar
- 1 tbsp honey
- In a bowl, mix together the olive oil, vinegar, and honey.
- Toss the remaining ingredients in a separate bowl. Drizzle dressing from the first mixture on top.
