I called this bowl a power bowl for a reason. It's full of amazing superfoods that taste great and will make you feel fantastic. It's an especially great meal for those busy days when your brain and your body need some extra help.

I started with beets because they're are high in immune-boosting vitamin C, fiber, and essential minerals like potassium and manganese. Then, I added sweet potatoes because they are an excellent source of vitamin A and many other nutrients.



I love Brussels sprouts because they are rich in many valuable nutrients such as vitamin C and vitamin K, and a boatload of minerals. So, of course they had to be part of this bowl!

The last veggie I added was cauliflower. It is a very good source of choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, and biotin. Finished off with some vitamin-rich oranges, this bowl is jam-packed with yummy, ultra-healthy food.
