While Clif Bar Inc supports the concept of the raw food diet, we also understand some of the concerns around eating raw food. Raw seeds and nuts contain compounds known as enzyme inhibitors. Enzyme inhibitors make digestion of these foods much more difficult for us. This is one of the benefits to eating roasted nuts, since the enzyme inhibitors are destroyed during the roasting process. To destroy these compounds, raw foodists generally soak their nuts and seeds in water prior to eating. We have chosen to use roasted nuts so that they will be more easily digested, while still getting the health benefits of these foods. Also, many raw dried fruits and nuts naturally contain high quantities of yeast and/or mold.
