I workout every day like it's my job. I do 3-4 sets with moderately heavy weight and work chest, back and triceps one day and biceps, shoulders, legs and wrists the next day. I am also heavy into running and boxing. I'm in excellent shape but 2 or 3 days a week I am absolutely exhausted and have trouble finshing my workout. I sleep about 8 hours (recommended amount) a night and try to eat right? Why am I so tired? Am I over working my muscles?

Cut back on the amount that you workout. I take it that you are not on steroids, because you would never feel exhausted. Try working out three times a week.
After doing this, if you still feel tired look at your diet. You might have a lactose intolerance or some other food allergy. Another question that you might want to ask yourself: do you feel as exhausted in summer? If not you might de suffering from S.A.D.
Try sleeping during the day, taking cat-naps here and there whenever possible. It is the way that humans are supposed to get sleep, and you will quickly be able to turn sleep on and off like a light bulb.
I hope that some of these things are helpful to you.

you can work out every day, just keep it to 45 minutes to an hour, and have 1 or two days a week just doing cardio.
