Recipe Of The Week: Garbanzo Bean Salad!

Garbanzo Bean Salad

Makes: 5 servings

Ingredients:

  • 16 ounces garbanzo beans (reduced-sodium)
  • 3 tomatoes, chopped
  • 1/2 cup red onions, chopped
  • 3 green onions, sliced
  • 1/2 green pepper, chopped
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 8-12 drops hot sauce
  • 1 teaspoon black pepper

Directions:

  • Rinse garbanzo beans in a colander and set aside.
  • Add the tomatoes, red onions, drained beans, green onions, and green pepper in a large bowl.
  • Mix vinegar, olive oil, hot sauce, and pepper. Pour over beans and other vegetables and mix.
