Healthy Recipes: Natalie Hodson's Blueberry Protein Pancakes
Get your egg whites in a new way! Natalie's pancake recipe is healthy, delicious and super simple. Protein pancakes have never been easier or tasted better!
Egg Whites

Old Fashioned Oats
1/2 cup
Baking Powder
1 tsp
Unsweetened Vanilla Almond Milk
(I like Almond Breeze brand)1/2 cup
Salt
1 dash
2 tiny scoops Stevia or 2 packets Truvia
Blueberries
1/4 cup
Unsweetened Applesauce
1/2 cup
Cinnamon
1 dash

- Put egg whites, oats, baking powder, almond milk, salt and Stevia in the blender.
- Blend for 30 seconds on med-high speed.
- Spray a pan with non-stick cooking spray, pour batter on pan and add half the blueberries.
- Cook like a regular pancake.
- For topping, add applesauce and cinnamon.
- Recipe makes two pancakes.

I didn't have any milk yesterday and substituted water, I still got a pancake. I thought it was too runny though so today I did it without milk or water and it was a PERFECT pancake.

Made a batch of these this morning. I added in a scoop of Vanilla protein powder to the mix and topped it with some WF Pancake syrup. Great recipe!!

The nutrition facts for these are way off. I added mine up to be 32 carbs and 33 grams of protein. weird!

followed all the directions only to have the soup (batter) never cook properly and waste all my ingredients

Quite tasty, but oh, so liquidy. I'd use 1/4 cup of the almond milk and then add more if the consistency is too thick.
Also, make sure you use a medium (not small) fry pan. My pancakes turned out more of a scramble, but still quite good. I'd make again with the adjustment to the almond milk.
