Brittany doesn't eat breakfast until 11 a.m., because she bartends and doesn't arrive home from work until the wee hours of the morning. Valuable lesson: Don't let circumstances interfere with a healthy lifestyle. You're in charge.

Her competition and off-season diets don't differ much. "I'm still eating oatmeal and egg whites,
chicken and asparagus, and things like
that," she says. "It just might not be
measured out as precisely."

This keeps her weight in a tight 5-pound range year-round, allowing her to seize modeling opportunities whenever they arise. Another lesson for model scouts: Be prepared.

In addition to the meals below, Brittany drinks a gallon of water per day. Proper hydration is the most basic aspect of healthy nutrition, yet it's often overlooked.
