Tuna Waldorf Salad w/ Mandarin Oranges On Bed Of Greens
3 medium cored/diced red delicious apples, unpeeled
Juice of half a lemon (or l Tbsp. lemon juice)
6 oz. chunk white tuna, in water, drained
1 cup chopped celery
1/4 cup walnut pieces
1/2 cup fat-free mayonnaise
1. Toss the apples with the lemon juice, then add the tuna, celery and walnuts.
2. Mix well with mayonnaise. If desired, salt and pepper lightly to taste.
3. Refrigerate for a couple of hours and serve on a bed of lettuce.
