Oriental Beef & Vegetable Stir-fry
2 tbsp. reduced-sodium soy sauce
2 tbsp. water
1 tsp. sesame oil
1 tsp. minced fresh garlic
1 tsp. dijon mustard
1 tsp. peeled and grated ginger root
1 lb. flank or round steak, sliced thin across the grain
1 red bell pepper, sliced thin
4 scallions, chopped
Blend first six ingredients in a 2-quart casserole dish.
Add sliced meat and stir to coat. Mix in red pepper and scallions.
Microwave uncovered on high 3-4 minutes, stirring once. Remove from oven and check for doneness. Some pieces of meat may be more rare than others; your preference will dictate further cooking for another minute (or so).
Garnish with sesame seeds and parsley. Serve with rice and oriental vegetables.
