Cortisol is a stress hormone that makes your body hold on to fats. If you eat healthy fats your cortisol levels will drop and you'll burn fat easier.
Digestion & Absorption
Healthy fats also aid digestion and improve absorption. If you had a meal with just protein and carbs it could get absorbed into the body too quickly and go straight to your fatty areas. If however, you added a little fat to the meal it will slow the absorption and give you better chance at burning it off with cardio.
Remember to stick with the healthy fats. Not burgers and fries!
